Each course is crafted with care, using the freshest and most seasonal ingredients—guided by the chef’s intuition, the spirit of the season, and the day’s market offerings.
“Omakase” means “I leave it to you,” and that’s exactly the spirit of this menu: a unique and personal journey, shaped in the moment.

This course is a unique opportunity to discover Japanese cuisine through a hands-on and cross-cultural experience.
In the morning, we prepare together a selection of seasonal appetizers and learn step by step how to make soba noodles from scratch.
The experience then continues at the counter, where Chef Takuya prepares and serves your meal in front of you.
Together with his wife Julie, they guide you through each dish, sharing the cultural background of washoku—the traditional Japanese cuisine. As part of the conversation, you will also learn how to cook rice properly and prepare a classic miso soup, with tips on how to adapt these essentials to your own kitchen and local ingredients.
This menu is not only about technique—it is a chance to slow down, to enter the seasonal rhythm and mindful gestures that define washoku.
